What's cooking...

Around here, some pretty good things, actually. I love this thick & creamy Mornay sauce. It is rich, definitely not your everyday sauce, but oh so delish! This was the first time I put shrimp in it. Great combination! I poured it over a bed of whole wheat spaghetti noodles, as that is what we had in the cupboard, although I actually prefer multi-grain. Still delicious though!


Scallion Parmesan {Mornay Sauce}

1/2 c butter
1/2 c scallions, chopped
1/4 c parsley, chopped
2 T flour
2 c cream
4 oz Swiss cheese, grated
4 oz Parmesan cheese, grated

In med-large saucepan, over medium heat, melt butter. Add scallions & parsley, cook 3 minutes. {I am rather generous with the green onions, & if you don't have some fresh Italian flat leaf parsley on hand, just substitute about a T of dried parsley. In this batch, I also added 1 T pesto, just for the heck of it. Now it was at this point that I added the raw shrimp to cook with the herbs & butter for a few minutes.} Then add flour & stir until well blended. Add cream {I usually run short & make up the rest with whole or evaporated milk} & simmer until heated, stirring frequently. Reduce heat to med-low & add approx. 1/2 c each of the Swiss & Parmesan. {I just used Parmesan  around 2/3 c. It was plenty cheesy!} Simmer a few minutes until thick. Salt & pepper to taste. Voila! You could probably omit the pasta & add some cooked veggies to create a lovely soup. I think I'm going to try that next!

  1. Your Mornay sauce looked delicious. You said the first of month is very busy going to the store and cooking up stuff. I think shrimp would be excellent. Does Keira and Bob like shrimp? Do you do left overs during the same day or the next day? Your dishes do inspire me to cook, Thank you. I like the way you explain everything--little extra touches, like explaining how if you run out of cream, just add whole milk or evaporated milk to the cream. Or use whatever cheese you have to make the recipe. Love Joy

    1. Thanks, Joy! I thought it was delicious. Bob tolerates seafood because I like it. We didn't really eat any while we were staying with Joe & Chita because Chita is allergic to it. Keira tried it, but she likes the pasta & sauce more than anything. Your welcome for the recipes. I usually use them as a base or guideline, changing things as I go, to either suit my taste or what's available in the kitchen. I'm glad you find it helpful & the recipes inspiring. I love to be inspired!:-)
