Chocolate Chip Banana Muffins

A recent recipe that we've tried and really like.
Unlike traditional banana bread recipes,
it uses no butter and is not heavy and greasy.
It's more like cake!
I've never tried banana bread with chocolate chips in it before,
but I like it!
... And it's easy! Yay!


Dry Ingredients:
2 1/2 c flour
1 c sugar {I cut this in half}
3 1/2 t baking powder
1 t salt {I use kosher}
1 t cinnamon {opt}

Wet Ingredients:
3 T vegetable oil
1 egg
3/4 c milk

Additional Ingredients:
3 ripe bananas
1 cup chopped nuts {opt} {pecans are my fave}
1 c chocolate chips {opt} {I like natural dark chocolate}

Combine dry ingredients together in large mixing bowl,
and in a separate medium bowl mix wet ingredients.
Then to the wet ingredients add 3 ripe bananas.
{I chunk one and mash two for improved texture}
Then add the wet to the dry and combine. Do not overmix.
{I use only a wooden spoon, no beaters}
Only mix until ingredients are just combined.
Mixture will seem a bit dry.
Gently fold in nuts and chocolate chips,
reserving a few chocolate chips to put on the tops of the muffins.

The volume of your mixture may vary depending on whether you decide to add nuts and chocolate, but for us this makes 6 jumbo muffins and one mini loaf that we bake at 350 for 35 minutes. 
For regular muffins it will probably make 12-18
and bake for approx. 20 min.
And for regular loaves it will make 2 and bake for approx 60 min.
Spray pans and add batter til 2/3 full. Top with extra chocolate chips.
Bake. Test for doneness with a toothpick. Cool in pan for 5 minutes.
Then remove to cooling rack to cool.

  1. Shiloh, banana nut bread is my favorite all time recipe. I love chocolate chips and so I imagine it will go good with bananas. Did Joe challenge you to a banana nut duel??? How funny!!

    1. Yes, Joe is your man if you want banana bread or apple crisp... or pad thai! :-) He is also the guy that learned you get really juicy turkey breasts if you roast it breast side down! LOL He's pretty handy in the kitchen!

  2. Shiloh, I assume you are talking about your Dad, Big Joe, not your brother, little Joe? What is Pad Thai?
    Is that an Argentine dish or Thailand dish? I suppose you laughed at this--Ha Ha!! The turkey breast was a good idea--do you cook your turkey upside down for juicy breast? xxoo Joy

    1. Nope. I'm talking about my brother, Joe. Yes, pad thai is a dish from Thailand. It is made with rice noodles, veggies, hot spices, and peanuts. It's yummy! No, I've never done the upside down turkey, but I suppose we'll have to give it a try sometime! Joe swears by it!:-)
