Pico de Gallo

Great idea #3, following salad, salad, salad! & homemade stewed tomatoes, for the abundance of garden cherry tomatoes that are piling up in the kitchen...Pico de Gallo! Recipe follows. What a delicious bounty of tomato goodness we have this year! Too bad we don't have room or canning supplies to be able to store them! I shared some with our neighbors just today, too!


Pico de Gallo

2 # tomatoes, diced (I used approx. 3 c diced cherry tomatoes)
3-4 scallions, chopped
1/2 c diced onion
3/4 c cilantro, chopped
1-2 jalapeno peppers, seeded & finely chopped 
(I only used 1, but it could use 2!:-)
the zest & juice of 1-2 limes
1-2 garlic cloves, minced
1 t kosher salt ( I always go easy on the salt)
2 t extra virgin olive oil

Combine all ingredients in bowl & enjoy! So many uses, but we just enjoyed it along with homemade guacamole & tortilla chips!

  1. That looks so yummy. Wish I could just stop by and have some guacamole, Pico de Gallo and tortilla chips with you three.

    Is Keira still apolizing for the rain storm and all the damage? I suppose it will be part of her mind for awhile.

    1. Me, too, Joy! I'd love to share with you! No, Keira hasn't mentioned the rain for the past couple days, but from what I hear, more storms are on the way! The guys were up on the roof today doing repairs. We'll see if they worked! I sure hope so. I don't want any more bedding to wash! By the way, I've got a new camera on the way! I'm so excited! Bob insisted that I upgrade & not just get a replacement, since it was only $20 more! So he's getting me an even nicer camera! I'm going from a Fujifilm 3mp 3x zoom to a Fujifilm 16mp 5x zoom! WooHoo! Can't wait til it gets here & I can start shooting!:-)
