Weekend Happenings

Keira wanted to have a tea party with her furry friends. Her woofer guitar looks like he's part of the party, but actually, he is just a wall flower.


I harvested our big basil bush again, but in a major way this time. After picking & washing, I had 9 cups of basil leaves. A plentiful harvest for making pesto! Recipe follows:


Pesto

2 cloves garlic, minced
4 c fresh basil leaves, washed & dried, coarsely chopped
1/2 T coarse sea salt (I omitted)
1 c extra virgin olive oil
1/2 c pine nuts, minced
1 c Parmesan cheese, freshly grated

As I intended to refrigerate & freeze some pesto, I did not add the pine nuts or parmesan cheese. So this is just the olive oil, garlic, & basil. I will add the pine nuts & parmesan when I'm ready to use it. I will share some with family & neighbors, as well. I don't have a food processor, so I did all the chopping with my knife! Yes, it took a little while, but it was fun. I learned a good technique for chopping up basil from Ina, the Barefoot Contessa, from the Food Network. She's one of my faves. 


Stan, our postman, came with a package for Keira today, from Grannie! She was ecstatic to receive her very first backpack!


& a pair of Saltwater sandals! They fit a bit better than her other white sandals, with just enough room for socks, or to grow a smidge!  Both are absolutely adorable!


She named this backpack Ellie, too! I suppose she likes it! Such a cute girly monkey...the both of them!
