One of the breakfast dishes Keira & I always enjoy cooking together is frittata. She has always helped me cook it, even as a baby when I held her in my arms. She would grab the handle of the large skillet, & I would grab the opposite handle, & we would shake the pan as we sauteed the asparagus & other veggies. She also loves to help sprinkle on the Fontina cheese, as she nibbles on some, of course! It's quite a versatile recipe, lending itself to any number of substitutions of veggies or cheese. So experiment! & enjoy! I will offer my favorite version of the recipe, which is made with asparagus (I often substitute zucchini, however, to which the photos will attest. It's a good second, in my book) & Fontina (I have substituted mozzarella in a pinch, but nothing compares to the mild, dry, nutty flavor of Fontina. I almost ALWAYS use Fontina).
Frittata with Asparagus, Tomato, & Fontina
Preheat oven to 450 degrees.
4 oz Fontina cheese, chunked, approx. 1 1/2 c
1 tomato, chunked (I always use 2 medium)
1 bunch green onions, diced (I add the white ends in with the asparagus)
6 large eggs (I use 8 as my pan is large & 6 will not cover it) blended with
2 T cream
1/2 t salt (I use kosher)
1/4 t pepper (I use coarse ground)
In large pan, over medium heat:
1 T olive oil
1 T butter, to which you will add
1 bunch asparagus, trimmed, cut into 1/4-1/2" pieces
(or zucchini equivalent to a large cucumber)
Saute asparagus til crisp tender, about 2-4 minutes (& only half as long for zucchini). I often save out the tender asparagus tips & add them with the next step. Add tomato, diced green onion, & a pinch of salt. Mix veggies together & shake pan to even out. Pouring in a circle around the pan, add egg. Let cook a couple minutes til eggs start to set up. Then sprinkle Fontina chunks over the top. Turn stovetop off & put in oven about 5 minutes or till eggs are nearly set. Then turn oven to broil until top is golden brown & cheese is nice & bubbly (Fontina doesn't brown like mozz, so don't overdo it). Let it cool about 5 minutes & slice up like pizza! Voila!

I can't believe someone so little as Keira can help cook. Whenever my kids helped they always broke the egg all over the counter, or got flour from head to toe. You are a very patient Mother. Keira & I would love to cook for you! I'm not very patient, actually. I don't appreciate unnecessary messes, which for a child, as you know, means there is no fun to be had!:-)Keira is just really good about knowing what she can do to help & what mama will do. I suppose I don't treat Keira enough as a baby. I just hope she can forgive me. :-)
