A Bit of Randomness

I've got a few days to catch up on, so here I go! After church on Sunday we went to visit several people, & in one of the front yards were plumeria trees in bloom! I had to pick just one to let Keira experience what Hawaii smells like! She loved it, & was more than happy to carry it all the way home for me! It still sits in this crystal bowl, floating on the water & transporting me back to Maui each time I catch its lovely fragrance. Mmmm. Probably the closest thing I'll get to a vacation for a long, long while! ha!


I'm not sure if Keira had a bad dream the other morning, but she woke up saying she was afraid of ghosts. I told her not all ghosts are scary, there's the Holy Ghost & even Casper, the friendly ghost! So I pulled her little Casper out of a box I keep him in; mostly, to keep him white, but also because she has plenty of toys & stuffed animals to play with. She asked me when we got him. I explained that she's had Casper since the day she got out of the hospital in SLC; a gift from the Ronald McDonald House. She's in love with her friendly ghost all over again!


In the evening, Bob called us out to see the sunset. This was the first thing we saw, the rising moon in the Eastern sky. 


Then, looking down the alleyway, the sun setting in the Western sky. My cell cam does no justice to the beauty of the sky on this particular evening.


Uncle Joe & Tia Chita surprised us with a visit yesterday, & made Keira's day by bringing their new little puppy, Chewbacca; or Chewie, for short!


Keira absolutely adored him in every way!


He is a chihuahua shihtsu mix, & is just so tiny & adorable! {Note that our grass is no longer green in the cell pics!}


I wanted to make homemade black bean chili for dinner today. We had all the necessary ingredients, except for stewed tomatoes. But we have a bounty of cherry tomatoes from our garden, so I figured I would stew my own. It took some doing but it made for some great chili! Pictured is just the stewed tomatoes. I'm trying to resist shooting any food photos until I get another camera, but I figured I might not be making stewed tomatoes again any time soon, so I made an exception! For all the trouble, it's definitely worth the $2/can at the supermarket! Recipe follows.


Italian Stewed Tomatoes

approx 75 cherry tomatoes, blanched, peeled, & diced
1/2 c onion, diced
1/2 c bell pepper, diced
1 T basil (I used fresh)
1 t oregano
1 t parsley
1 t kosher salt
1/2 t pepper

I used a large kettle to control the spatter somewhat. Put all ingredients in & place over medium heat. Stirring occasionally, cook at least 15 minutes or until desired consistency. I cooked it for an hour. Fairly straight forward recipe & quite simple, except for the tomato preparation!:-) Made approx 2 1/2 c, about the same amount as a large can.

    I loved your post on the Plumeria tree. Describe the trees. I never knew that Plumeria grew on trees. I guess I always thought they grew on bushes or plants. Is the tree big, medium, or small? Is this blossom what Hawaiian Lays (SP) are made from? Uncle Pete used to visit Hawaii and brings us all back Hawaiian Lays (sp). I still remember how fragrant and delicate they were. You sent me picture from Hawaii but all the beautiful plants were in pots or bushes...no trees.

    Joe and Chita's pup looked great. That is a great name: Chewie for a pup (he will probably chew up all their shoes). Did you say that Joe and Patty live about an hour away?

    I can't believe you went to the trouble to stew your own tomatoes. The things we will do in a pinch! I wish I could have some of your black bean Chili. It just looks so good. Did you have hot bread to go with it?

    Casper is so cute. I liked the way you explained ghosts to Keira. What a lucky child to have you as her Mother.

    1. Yes, plumeria are trees, I would say about medium-sized. The trees I saw the other day were young & a couple feet taller than I. Yes, it's one of the main flowers they make leis out of. I also love leis made with tuber roses, they are so fragrant! Joe & Chita said that Chewie does indeed chew on everything, just like every pup does! Yes, they live about an hour away, in Joshua Tree, but they are often passing through for Joe's work appointments & such. I didn't post a pic of the chili, just of the stewed tomatoes. No hot bread, just bread & butter. Gotta have that or some crackers! I think I'm much luckier than Keira, but thank you for saying such kind things. I always feel like I have such a long way to go to be the mother I'd like to be for her. Thanks for your comments, Joy!

    2. Yes, Shiloh, I got the message correctly when I saw the stewed tomatoes, and got mixed up when I said Chili. Yum, yum. You are indeed so artistic and make food look so good because you are a top notch cook. I still remember the Thanksgiving feast you prepared last year!! I love Thanksgiving at Heidi's too as she and Kathy are fantastic cooks. Even Chris made turkey one year that was cooked in a big hole in the ground. Sounds yummy.

      On the tuber roses, I imagine they are like Iris and have a big root in the ground. Right?

      Your little cell phone does a good job. Sorry about the hassle, but I so enjoy the blogs. Thanks for the spelling of Leis, for some reason I could not get spell check to work in this instance.

      I bet Keira was happy to see joe and patty. That is nice of them to stop and cheer Keira up with chewie.

  2. I remember the delicious Thanksgiving dinner we had at your home in Pullman! mmmm! That's great that your kids are such good cooks, that way you can eat like a queen whenever they're around!:-) Tuber roses are a bit different than Iris, as they have many blooms on the stalk & not just one. They are also typically white & very fragrant! One of my faves! They are a bulb type plant I believe. I'm more familiar with just the little flowers than the entire plant. Keira sure was happy to see Joe & Chita & little Chewie! She's already talking about wanting to see them again!:-)
